
It’s been a minute since I’ve done an installment of Diary of a Kitchen, but I am cooking with more regularity now, and I am finding my groove in the kitchen again. In these installments, if you’re new here, I give the recipe and correspondences for each ingredient. Let’s go!
One little note: I have a lot of food allergies AND texture/sensory issues. Veganism and vegetarianism are not in the cards for me. Please take what resonates, let what doesn’t.
Basic Bitch Salad
I have finally hit my salad stride again… after a couple years, YIKES! I love salads because they’re quick and simple. I guess I need green veggies or whatever, too…
Recipe
Spring Mix
1 Nectarine
5 Strawberries
6-7 rounds of Cucumber quartered
6 Gluten Free Chicken Nuggets, Sliced
1/3 lemon, juiced
1/8 cup olive oil
Zaatar Seasoning to taste
Assemble your salad ingredients. Whisk together your dressing ingredients (oil, lemon, zaatar). Cook your nugs. Enjoy!

Broccoli Pesto
I used to make this by hand chopping as delicately and finely as I could. I am very grateful for the Mini Cuisinart we have now. It has been a decade since we’ve had this dish, and it was just as amazing as we remembered. We paired it with ahi tuna steaks from Trader Joe’s and rice.
Recipe:
1 cup of Broccoli Florets
2 cups of Basil
Olive Oil to taste/desired texture
3/4 lemon juiced, or to taste
salt and pepper to taste
Voosh voosh all of that up in your blender or Mini Cuisinart. Unfortunately the little immersion blenders don’t work very well for this one.
